Cave St. Pierre Alpes Fendant du Valais

Chasselas — called Fendant in Valais — is the soul of Swiss white wine. This bottle from the canton of Valais shows why the grape variety has worked so well there for generations: light body, lively acidity, unobtrusive and yet present.

The Cave St. Pierre vinifies in the classic Valais style — designed for freshness, without wood aging. Valais is the driest region in Switzerland, favored by the Foehn wind and the protective Alpine chains. The soils of gneiss and slate give the Fendant its characteristic minerality.

In the glass, it shows pale straw yellow. On the nose, pear juice, white peach, and a hint of lemon verbena. On the palate, crisp, with mild acidity and a slightly mineral-stony finish — dry, lean, direct. Not a wine for pondering, but for spontaneous pouring.

In detail

How does the Cave St. Pierre Alpes Fendant du Valais taste?

It tastes dry, lean, and fresh, with an acidity that carries the wine without making it sharp.

Aging in steel tanks defines the drinking experience. Without oak, the wine remains clear and straightforward, and the grape variety is at the forefront. At 12% vol, it does not feel heavy. Compared to many white wines aged in barrels, it lacks roasted aromas and creaminess. In return, you get a wine that is well-suited for food because it does not mask anything. The screw cap also fits this uncomplicated style.

What does the Fendant pair with?

It plays to its strengths with cheese. With Pecorino or other strong varieties, the acidity stands up to them and cleanses the palate for every bite. A risotto gets a counterweight to its creaminess from the lean body and dry nature. Pasta with a light sauce also pairs well with it because it does not overwhelm it.

With fish and sushi, the light body helps: delicate fish meat and fine rice notes are preserved, while the acidity provides freshness. Olives match its dry, mineral side and make it a good companion for the beginning of an evening.

You can serve it at 10–12 °C. It is suitable for evenings with friends at the table, for summer on the terrace, and for cheese evenings in winter.
