CARCIOFI - Artichoke hearts with herbs in oil

Small artichoke hearts from Italy, carefully cleaned and pickled whole — a classic antipasti ingredient, essential for starting a meal. Their compact size is no accident: each heart fits on a toothpick, making carciofi an easy finger food option.

The artichokes are preserved with herbs in olive oil. The result is a mild, nutty aroma with the slightly bitter character of the artichoke, rounded off by herbal notes in the oil. The texture remains firm enough to bite into without being too fibrous.

They look best on an antipasti platter alongside cooked or raw ham, salami, and toasted bread. The pickling oil is perfect for drizzling over bruschetta. A dry Vermentino or a light Soave pairs well with them.
