Cantuccini from Prato — the model for everything that has since been considered an almond biscuit. Baked according to the same recipe since 1858, in a shop in the old town that is besieged by locals on Sundays after mass.
The base: freshly beaten eggs, a high almond content, and pine nuts. No shortcuts, no substitutes. The result is a cookie with real bite resistance—hard enough for dipping, delicate enough to be delicious on its own.
Traditionally served with Vin Santo: dip briefly, wait a moment, then eat. It also works well with a dry Amontillado sherry or a mature Moscato d'Asti. Enjoy it as a tea biscuit or to finish off a cheese platter with Pecorino.
