Ojo de Ibiza Tierra Sur

Ojo de Ibiza Tierra Sur is an expressive red wine from the northernmost tip of Ibiza – a passion project by Dieter Meier , the Swiss musician and visionary who transforms the wild limestone terraces of Sant Mateu d'Albarca into liquid poetry. At an altitude of 350 meters, shaped by strong katabatic winds, Mediterranean sun, and the salty breath of the sea, Monastrell and Syrah grapes reach their perfect ripeness.

In the glass, it shines a deep ruby ​​red with violet reflections . The nose opens with aromas of blackberry, wild berries, violets, and herbs , accompanied by a distinctive salty sea note and subtle spice. On the palate, it is balanced, juicy, and elegant, with fine tannins, lively acidity, and a long, mineral-fruity finish.

Aged for one year in French oak barrels , vegan, 14.5% ABV, served at 16–18°C . Ideal with beef steak, dark pasta sauces, and Manchego cheese. A wine that unites the earth, sea, wind, and sun of Ibiza in a single glass.
