Winemakers Catherine and François from Vallet, in the heart of the Muscadet-Sèvre-et-Maine wine region, are passionate about Melon de Bourgogne, a unique grape variety in the Loire Valley. Huteau Boulanger - Muscadet from the gray slate of the Loire

Huteau Boulanger is located in Vallet, one of the core villages of the Muscadet Sèvre et Maine appellation. Catherine and François cultivate 45 hectares, whose soils are almost entirely composed of grey slate — a subsoil that imparts a cool minerality and a subtle salinity to the wines, which can hardly be forced.

Their only grape variety is Melon de Bourgogne, a variety that became naturalized in the Loire Valley and plays a negligible role elsewhere. In the right hands and on the right soil, it reveals its potential: clear fruit, vibrant acidity, and a texture that gains even more depth with some lees aging (sur lie).

The winery's philosophy is straightforward: soil, climate, and nature determine the wine—not the cellar's craftsmanship. The result is Muscadets that pair well with Atlantic oysters, seafood, or a simple plate of sardines, but are also delicious on their own.
