Taglierini verdi, Bio

Taglierini verdi are the narrower cousin of tagliatelle – a classic shape from northern Italian cuisine, here organically colored and flavored with spinach. The spinach gives the durum wheat semolina a delicate green color and a slightly earthy note that gently complements the pasta's natural flavor.

The pasta cooks quickly and retains a delicate al dente texture. Creamy sauces based on mascarpone or Parmesan cling beautifully to its thin surface. A classic is burro e salvia with plenty of butter and fresh sage. A sugo made with zucchini, ricotta, and lemon zest also pairs well. A dry Verdicchio or a light Soave are good wine pairings. Cooking time: 3–4 minutes in plenty of salted water.
