The traditional winery from the Languedoc looks back on over 470 years of experience and is considered the inventor of the Méthode Ancestrale – a process that was developed as early as 1531 by Benedictine monks in the abbey of Saint-Hilaire and thus existed before Champagne. To this day, the winery is closely intertwined with this history: around 200 winegrower families from the region around Limoux bring their grapes together and thus create a variety of terroirs that is reflected in every wine.
