Sauvignon Blanc DOP

Sauvignon Blanc that tastes of Collio: fresh, aromatic, with a precision that has made this small border region between Friuli and Slovenia famous. The Sturm winery is one of those estates that has been shaping the Collio for decades — artisanal, family-run, with a deep understanding of the calcareous flysch soils of the hills.

In the glass, the Sauvignon Blanc from Sturm shows what this grape variety is capable of here: elderflower and lime zest on the nose, plus a hint of tropical mango that never becomes intrusive. On the palate, crisp acidity with a good flow, everything in balance. The grapes are hand-picked and fermented cool — the result is a wine that cleanly holds freshness and aromatics together.

Fresh goat cheese is a classic pairing, and it really works: the acidity cuts through the creaminess, the herbal notes play off each other. A risotto al limone or grilled sea bass with caper butter also fit well. Serving temperature: 10–12 °C.
