San Cosme Mezcal Blanco

San Cosme Mezcal is a spirit made from the Espadin agave, produced in the Mexican state of Oaxaca. The production process is an art form: During harvesting, the agave leaves are separated from the heart of the plant. The agave hearts are then cooked underground in traditional methods, in pits that serve as ovens. There, they absorb the aromas of the earth and smoke, which give the mezcal its characteristic flavor. The cooked agave is then ground with a "piedra tahona," a stone mill typically pulled by a horse or ox. Spontaneous fermentation takes place in open wooden vats. Distillation is carried out in a "alambique de cobre," a copper still, over an open fire.
