Risotto with radicchio

Risotto al radicchio from La Balocchina combines mild round-grain rice with the finely bitter radicchio from the Veneto – two Northern Italian classics in one blend. The included granulated broth can cause slight clumps, which dissolve completely during cooking.

In the finished dish, the starch of the rice buffers the pleasant bitterness of the radicchio: creamy consistency, clear vegetable note. A few raw radicchio leaves stirred in just before serving add extra bite and color.

Pairs with game, duck breast, or braised beef. In the glass, a full-bodied red wine from the Veneto – Amarone or Valpolicella Ripasso.
