Risotto with artichokes

Risotto ai carciofi from La Balocchina — a Northern Italian classic combination of aromatic round-grain rice and artichokes, which bring their characteristic, slightly bitter note to the dish.

The risotto rice is mild and binds to a creamy consistency when cooked. The artichokes provide a fine bitter accent in contrast — the interplay remains balanced without dominating. Grated Pecorino romano rounds off the aroma with salty spice.

On the plate, it pairs well with Bresaola or fried chicken. Dry white wines with lively acidity are suitable as a wine accompaniment — a Verdicchio dei Castelli di Jesi or a Soave classico harmonize well with the artichoke bitterness. Preparation time: approx. 20 minutes.
