Ribolla Gialla DOP

Ribolla Gialla is one of the oldest grape varieties in Friuli — at home for centuries in the border region between Italy and Slovenia, long forgotten, and today brought back to the forefront by committed winemakers like Societa Agricola Sturm. The Sturm winery works in the Collio, a gently rolling hilly landscape right on the Slovenian border, whose characteristic ponca soils made of weathered sandstone and marl give the wine its unmistakable minerality.

In the glass, it shows a clear straw yellow with light green reflections. The nose is fresh and precise: wildflowers, green apple, and lemon zest form the core, underneath lies a fine chalky undertone that makes the origin from the ponca soils palpable. On the palate, a lively but never sharp acidity carries the wine — the mouthfeel remains lean and taut, the texture light and flowing. The finish is lemony-salty with a hint of white blossom and a pleasant length that invites the next sip.

Serve it well chilled at 8–10 °C. As an aperitivo, it is just as convincing as it is as a companion to ceviche with lime, scallops with fresh herbs, or a mild goat cheese. Those who like to cook with acidity will also find a table partner here for light pasta with seafood or grilled fish with capers and lemon.
