Pouilly-Fuissé from the Mâconnais — that's Chardonnay grown on calcareous clay and marl soils, with a richness that nevertheless remains fresh. This Ferret classic shows why the appellation is far more than just a prestigious name.
Domaine Ferret is one of the most renowned wineries in Fuissé. The grapes for this entry-level Pouilly come from various parcels surrounding the estate, which now practices biodynamic viticulture. In the cellar, stainless steel tanks and multi-used oak barrels share the workload: 50% of the grapes ferment in the tank, preserving the freshness of the fruit, while the other 50% mature in the barrel, giving the wine texture and depth—without the oak ever dominating.
The glass reveals ripe yellow pear , a touch of white peach , and a subtle hint of hazelnut from the oak aging. The acidity is lively but embedded in a soft, creamy mid-palate. The finish is long, with a delicate mineral note.
Serving temperature 10–12 °C. Pairs well with chicken à la crème , pan-fried pike-perch with butter, or a mature Brillat-Savarin. Drinking window 2024–2028.
