In search of cool locations in South Africa, one travels southeast from Cape Town through the Hottentos-Holland Mountains and arrives in Elgin. As you ascend the key-shaped highlands, the climate and vegetation change: it becomes cool. Elgin is actually known for apples and peaches. Paul Cluver was one of the first to recognize the region's potential. He dedicates himself exclusively to grape varieties suited to the cool climate of the Elgin plateau, varieties that perfectly express the terroir. Today, he is one of South Africa's top producers and is overwhelmed with awards. Burgundian finesse from the other side of the world!
