In search of cool locations in South Africa, one travels southeast from Cape Town through the Hottentos-Holland Mountains and arrives in Elgin. As you ascend the key-shaped highlands, the climate and vegetation change: it becomes cool. Elgin is actually known for apples and peaches. Paul Cluver was one of the first to recognize the region's potential. He dedicates himself exclusively to grape varieties suited to the cool climate of the Elgin plateau, varieties that perfectly express the terroir. Elgin lies behind the Hottentos Holland Mountains, 700 meters above sea level—unusually cool for South Africa. Paul Cluver was among the first to recognize this.
