Fortunately, citrus fruits and olives ripen at the same time in Italy. 82% olives and 18% untreated, freshly harvested citrus fruits are milled together in the oil mill. As with standard olive oil production, the fruit water, solids, and oil are separated. The result is the finest extra virgin olive oil combined with the fresh aroma of the essential oils from the citrus peel. Nothing more. What was once a byproduct of cleaning the oil mill was transformed by Giuseppe Ursini into an indispensable standard product for discerning palates. An unparalleled, intense flavor experience with diverse uses in Mediterranean seafood dishes, salads, pasta, and poultry.
