Olio extra vergine Mosto Argento

The Mosto Argento from Viani is a cuvée of the olive varieties Taggiasca, Gentile, and Peranzana — three varieties that together provide more balance than any individually. Viani stands for Ligurian olive oil culture, in which the small, aromatically fine Taggiasca has shaped the image for centuries.

In the glass, the oil shows a mild, fine-fruity style: delicate almond tone, soft texture in the finish, no scratchy-peppery bite. Exactly this makes it the ideal choice for Ligurian fish cuisine — over steamed fish, with seafood, as a base for pesto, or as a finish over a light vegetable soup. A dry Vermentino or a young Pigato from Liguria pairs well with this.
