Officina del Vento Grillo
Grillo is Sicily's most distinctive white grape variety – and this wine shows why: lively, salty, with a freshness that one wouldn't necessarily expect from the Mediterranean climate.
The vines grow on Sicily's volcanic soil, which imparts its characteristic minerality to the wine. Hot days, cool nights, and the constant wind – vento – ensure that the aromatics are preserved despite the sunshine.
In the glass, the Grillo displays bright citrus aromas: lime, green lemon, along with white blossoms and a hint of almond in the background. The palate is lean, with lively acidity and a salty-mineral finish that makes it seem longer than expected.
Serving temperature: 10–12 °C. Best enjoyed young – 2024 to 2026.
Goes well with: grilled calamari, fish soup, burrata with tomatoes or a light goat cheese.
