Kyrö New Make

A New Make spirit from the Finnish Kyrö Distillery — clear, unaged, and thus the most direct look into the character of a rye distillate before the cask begins its work.

Kyrö comes from Isokyrö, a village in Ostrobothnia known for its rye cultivation. The distillery was founded in 2012 by five friends in an old dairy and has since specialized in Finnish rye — as the base for their whiskies and gins. The New Make is not a finished product, but the fresh distillate straight from the still: unfiltered, undiluted by wood, with a full grain profile.

In the glass, you can see what rye is capable of: a characteristic spice profile with bread dough, a hint of dill, and fresh grain sweetness. The texture is slightly oily, the finish clear and dry with a subtle spice. No caramel, no vanilla — that only comes with the cask. Here, the raw material is the event.

Neat at room temperature to experience the distillate unadulterated — or as a base for a Whisky Sour, where the rye spice draws a clear line against citrus. Serving temperature: 18–20 °C.
