Katharos Muscadet - Sans soufre ajouté Vices & Vertus

The Katharos Muscadet - Sans soufre ajouté Vices & Vertus is a dry white wine with an intense straw yellow color and golden reflections. Its fragrant bouquet of ripe and exotic fruits with notes of pear and banana makes it a complex delight. On the palate, it is juicy and multifaceted with elegant richness, a clear structure, and a lingering freshness on the finish. This wine is excellent as an aperitif or as an elegant accompaniment to various dishes such as salmon tartare, scallop carpaccio, sushi, seafood, white meat, poultry, or mild goat cheese. Louise Chéreau selected a special parcel at Château de Chasseloir for this wine, where old Melon de Bourgogne vines grow. The grapes are harvested at full ripeness, gently pressed, and fermented without added sulfur to preserve their aromatic freshness. Katharos, which means "pure" in ancient Greek, is part of the Chéreau family's new Vices & Vertus line. This wine uniquely embodies the region's typical grapes and winemaking methods. A delight for connoisseurs and lovers of fine wines.

Chéreau Carré

The healthy, aromatically ripe Muscadet grapes are brought immediately to the winery, gently pressed here in pneumatic presses, then the musts are gently pre-clarified by cold sedimentation and traditionally fermented over about two to three weeks.

According to AOC regulations, the wine remains on the fine lees after fermentation for the entire maturation period until bottling.

The traditional bâtonnage, the regular stirring of the fine lees, gives the fruit even more expression and the wine as a whole an even more elegant fullness and balance.

After completion of the (at least four-month) maturation, the Muscadet is bottled in the spring of the following year at Château de la Chesnaie directly from the lees and released for sale.
