Jabalí Tempranillo-Cabernet develops complex aromas on the nose. Notes of mint and hints of wood create a vibrant wine. The tannins are attractively integrated. The finish is long, characterized by a blend of fruit, floral notes, and a touch of licorice. Bodega Virgen del Aguila is one of the most dynamic wineries in Cariñena and was named the second-best winery in Aragon by the Academia Aragonesa de Gastronomía in 2010! The winery's name is derived from the revered Virgin Mary "with the eagle." Paniza, the town where the winery is located, lies in the foothills of the Sierra Paniza mountain range, which rises to over 1,000 meters. The eagle is still at home there today. Cariñena was already an important wine-growing region in the ancient Kingdom of Aragon. Modernity and tradition coexist, and the youthful Agostón wines satisfy both modern, trendy, and traditional tastes: they are fresh, approachable, juicy, and simply delightful. These are uncomplicated, high-quality wines, rarely found in the Cariñena region. Virgen del Aguila used only new oak for both red wines, creating a perfect harmony with the pronounced, youthful fruit aromas. The wine was aged in wooden fermentation tanks.
