Giardiniera in olio

Giardiniera – literally "from the garden" – is one of Italy's oldest pickling methods. Carrots, cauliflower, peppers, fennel, celery, and onions are cooked in water with a splash of vinegar and then preserved in oil. The result: crisp vegetables that retain their color and texture.

On the palate, the Giardiniera displays a mild acidity that softly rounds out the oil. Each vegetable contributes its own character – the fennel slightly aniseed, the cauliflower nutty, the bell pepper fruity and sweet. Its aroma unfolds best when served chilled .

A classic on an antipasto platter alongside salumi and aged pecorino. It also pairs well with cold roast meat or as a side dish to grilled fish. Enjoy it with a dry Vermentino or a light Rosato from southern Italy.
