
Geltz/Zilliken Saarburg Rausch Cabinet
The Saarburger Rausch vineyard is one of the great steep Riesling sites of the Saar region — and Geltz-Zilliken has been its most reliable producer for generations. This Kabinett demonstrates why the Saar is known for its delicate elegance and vibrant acidity.
The winery in Saarburg is run by Dorothee Zilliken, the fourth generation of her family to do so, and she consistently brings out the delicate minerality of the Rausch wine. The slate soil imparts its characteristic coolness and vibrancy to each vintage.
In the glass, the Kabinett displays bright citrus and peach notes, underpinned by fine slate minerality and a hint of apricot blossom. The acidity is lively but never harsh—it carries the delicate interplay of residual sweetness typical of a classic Kabinett and keeps the finish long and cool. This is precisely what makes Saar Rieslings a chapter unto themselves.
Recommendation: Serve slightly chilled at 8–10 °C. Pairs well with Asian dishes featuring coconut milk, pan-fried trout with almond butter, or mature goat cheese. Drinking window 2025–2032 — accessible now, will become even more complex with another two to three years of cellaring.
