Don Papa Alon is a Philippine rum produced on the island of Negros Occidental – where sugarcane grows in volcanic soil and is harvested by hand. The name "Alon" means "wave" in Filipino and alludes to the gentle rolling of the waves at sunset.
The base is molasses made from Philippine sugarcane, aged in American oak barrels under a tropical climate – the so-called "angel's share" is significantly higher in this heat than in European warehouses, which accelerates and concentrates the maturation process. In the glass, the Alon displays creamy coconut, ripe fig, and yellow fruit – mango, white peach – with a soft, rounded texture. The finish is gentle and slightly sweet.
Serving temperature: slightly chilled, neat or over large ice. It also works well as a base for a simple Rum Sour with lime – the fruit's sweetness carries the drink without any additional syrup. Perfect for enjoying at sunset on the terrace or as an introduction to Filipino rum styles.
