Domaine des Geneves Chablis 1e Cru Les Forneaux

Chablis Premier Cru from the Les Forneaux vineyard – one of the warmer sites in eastern Chablis, which gives Chardonnay a rare richness without sacrificing its defining minerality.

Domaine des Genèves cultivates its parcels in the limestone and Kimmeridgian soils of Burgundy, which impart Chablis with its characteristic pebbly and chalky minerality. Les Forneaux benefits from a south- to southeast-facing exposure, which is noticeable in the glass: more body and richness than in cooler Premier Cru vineyards.

On the nose, roasted aromas and butter from barrel aging are underpinned by honey, beeswax, and a hint of gingerbread spice. On the palate, the wine is compact and rich – ripe quince and white peach meet a lively acidity that maintains its freshness without being harsh. The finish is long, with a salty-mineral note typical of well-situated Chablis vineyards.

Serving suggestion: Serve at 10–12 °C. Drinkable now, but will easily keep until 2029. Pairs well with scallops with butter sauce, sweetbreads or aged Comté cheese.
