In the northernmost tip of Burgundy, where Kimmeridgian limestone and a continental climate set the tone, Domaine des Genèves cultivates its sites as a Propriétaire-Récoltant — meaning: own vines, own pressing, full responsibility for every vintage. No purchasing, no blending with foreign material. What ends up in the glass grows on the soil that has shaped Chablis for centuries.
This soil is the heart of it all. The Kimmeridgian limestone, interspersed with fossilized oyster shells from the Jurassic Sea, gives the wines their characteristic salinity and that cool minerality that is hard to describe but immediately recognizable. Domaine des Genèves consciously avoids wood aging — no barrique that masks aromas. Instead: steel tank, precision, pure origin.
