Domaine des Geneves Chablis

Chablis in its most direct form: cool, mineral, with the typical radiance of the Kimmeridgian limestone on which the vines of northern Burgundy are rooted.

Domaine des Genèves manages Chardonnay sites around the town of Chablis – a region known for its uncompromisingly clear style, which differs significantly from the richer white Burgundies further south. No butter, no oak – instead, tension, salt, and length.

In the glass, the wine shows aromas of lemon zest, white peach, and a hint of candied quince. Underneath lies a distinct mineral note – that characteristic steel-stone pull associated with good Chablis. On the palate, medium body, lively acidity, round finish with a slightly fleshy texture.

Serving recommendation: Serve the wine well chilled at 10–12 °C. It pairs excellently with oysters, grilled sea bass, shrimp with garlic butter, or a classic chicken à la crème. It also makes a good figure as an aperitif – without taking away the appetite.
