"Calvados" is both a department in Normandy and the name of a traditional apple brandy originating from that department. The name "Calvados" comes from a frigate of the Spanish Armada that was wrecked on the Normandy cliffs on its way to the great naval battle against England. It was named "Calvador." The golden apple brandy from Calvados is a prized specialty. Unlike apple brandies from Germany and Switzerland, which are usually made from apple pomace, Calvados is distilled from cider, the fermented juice of Norman apples. After the careful distillation process in copper pot stills, Calvados is aged for at least two years in oak barrels, depending on the quality level.
