Calvados Dauphin comes from the Pays d'Auge, a paradisiacal region in the heart of Normandy. There, the apples grow from which the finest Calvados is distilled. This is how nature intended it, and this is what French law stipulates. Only Calvados from this strictly defined region—like Calvados Dauphin—may bear the coveted designation "Calvados Pays d'Auge Contrôlée." A Calvados Pays d'Auge, just like Cognac, is distilled twice in small, copper pot stills. The distillate then matures in oak barrels at a constant cellar temperature of 12 to 14°C. For the connoisseur, Calvados from the Pays d'Auge must smell and taste of fresh, fruity apples. Calvados Dauphin possesses this wonderfully pronounced apple bouquet and the fresh, fruity-tart flavor that delights Calvados connoisseurs in both Germany and France. The wine is stored in oak barrels.
