In the cellar, time is the deciding factor. Young bottlings immediately reveal the fruit: fresh apple, a hint of pear, lively acidity. With increasing aging in Norman oak barrels, the fruit recedes, making way for dried fruit, vanilla, and a velvety texture that lingers on the palate. Whether two years or twenty – the style remains recognizable: clear, without heaviness, with a dry finish.
