The barriques for aging the wines are located underground in beautifully designed naves. In the center of the underground halls is the 'dormitorio', the 'dormitory', where the wines mature in the bottle. Pago de la Jaraba is characterized by a desire for beauty. This is communicated to the wines and to the visitor. In the glass, the Azagador Crianza shows a rich and penetrating ruby red. On the nose, it exudes an intense, typical scent brought by the Cabernet Sauvignon. Dark, juicy (natural) fruits accompanied by a fine vanilla/wood note and fine spice. The Bodega
Pago de la Jaraba is a modern winery in the heart of La Mancha that was restructured in 2001. The name "Jaraba" comes from Arabic and means "water-rich land".
The estate covers 80 hectares of vineyards at an altitude of 750 meters with the grape varieties Tempranillo, Cabernet Sauvignon, Merlot, Graciano, and Sauvignon Blanc. In 2019, the area was classified as the highest Spanish wine quality level, "Vino de Pago".
In addition to wine, the estate also produces artisanal Manchego cheese and olive oil. Visitors are welcome by appointment – tours of the vineyards and cellars as well as tastings are offered.
