This wine is made entirely from the indigenous Xinomavro grape variety, with the emphasis on 'no'. All grapes were hand-harvested at an altitude of 690 meters, in a region with significant temperature variations between day and night. This greatly benefits the ripening process and the development of the aromas. The Xinomavro grape is a clone of Nebbiolo and also related to Pinot Noir. This is not surprising, as the Florina region lies at the same latitude as Burgundy and Piedmont.
