Château Romer – Sauternes in family hands since 1851. That year, the Hayot family acquired the estate in Fargues, and shortly thereafter, it was classified as a Second Class Growth in 1855. The acquisition dates back practically to the very beginnings of Sauternes. In the mid-19th century, the late-harvest method was developed – by chance, through perseverance. The era of legend began. And the Hayot family has been there from the start. Today, Catherine and Fabienne du Hayot continue the legacy. Sauternes – a celebratory wine. With history, with attitude, with character.

The Hayot family has cultivated their estate in Fargues – right in the heart of Sauternes – since 1851. Second-ranked in 1855, it remains in the family to this day. Catherine and Fabienne du Hayot manage the vineyard with the same meticulous care as their ancestors: harvesting for botrytis, year after year.
