Château Romer – Sauternes in family hands since 1851. At that time, the Hayot family took over the estate in Barsac, followed shortly thereafter by the 1855 classification: Second Growth. The acquisition dates back practically to the beginnings of Sauternes.

In the middle of the 19th century, the method of late harvest was developed – by chance, by perseverance. The era of the legend began. And the Hayot family was there from the start.
