The designation Calvados is protected – only brandies from the Norman region of origin may call themselves that. Within the appellation there are different quality levels that quickly tell you how long a Calvados has matured in the barrel:
- Fine – young, fruity, with lively apple aromas
- V.S.O.P. – at least four years of barrel ageing, rounder and more complex
- Hors d'Age – long matured, deep, warm and of great elegance
