Kamptal terroir from the Heiligenstein and Gaisberg
Birgit Eichinger is one of the winemakers who not only represents the Kamptal but has helped shape it. Her winery is located in the heart of the region, between Langenlois and the striking primary rock sites of the Heiligenstein – one of Austria's most significant single vineyards, characterized by Zöbing primary rock that stores heat while simultaneously providing unmistakable minerality.
Her philosophy can be summarized in one sentence: as little intervention as possible, as much care as necessary. In practice, this means: hand-picking, gentle processing in the cellar, and consistent trust in what the site provides anyway. Her Grüner Veltliner and Riesling from the Heiligenstein and Gaisberg show no artificial stylistics – they taste of the place they come from.
In the glass, this means for the Riesling: tension between fruit and spice, a salty pull reminiscent of volcanic rock. The Grüner Veltliner brings the typical peppery freshness, but with a texture that hints at depth. Both wines are suitable for Wiener Schnitzel, grilled zander, or a mature mountain cheese – and continue to develop in the cellar over the years.
