TARTUFATA - Pestato di funghi misti e tartufo
Tartufata is a classic pesto from the Italian antipasti tradition: coarsely pounded button mushrooms and porcini mushrooms, refined with black summer truffles, preserved in extra virgin olive oil. The pieces are deliberately left coarse – this gives the paste a texture and substance that finely pureed versions cannot achieve.
The earthy flavor of the mixed mushrooms dominates, complemented by the summer truffle's characteristic forest notes. The olive oil harmonizes the flavors without overpowering them. Store in a cool place and consume within a few days of opening. Tartufata unfolds its full aroma when served over pasta – ideally tagliatelle or pappardelle – as well as stirred into gravy or poured over a simple omelet. It's also delicious on toasted white bread as a quick appetizer.
