Primitivo Salento IGT Cubardi

Primitivo from Salento is capable of much — this one shows what happens when the vines are old enough to really have something to say. The vines of the Cubardi are around 65 years old and yield concentrated grapes with an intensity that is immediately apparent in the glass.

Schola Sarmenti works in the southernmost tip of Apulia, where the sun drives the berries to full ripeness. The Cubardi is a single-varietal Primitivo — 100% — and brings everything the grape variety is known for in Salento: dark cherry, dried plum, a full-bodied profile with soft, well-integrated tannins.

On the palate, it is powerful without being heavy. The fruit remains present, the finish long and spicy. Those who appreciate wines with substance without them overpowering the food will find the right choice here.

Pairs with braised lamb, duck, or goose, with stews featuring lentils or white beans — and with anything that has been in the oven for a long time. Serving temperature: 16–18 °C.
