The Freiherr von Gleichenstein winery is one of the traditional addresses at the Kaiserstuhl in Baden — a region that, with its volcanic rock and the warmest climate in Germany, provides the foundation for full-bodied, aromatically ripe wines. The fact that the house also relies on the classic bottle fermentation process for its sparkling wine is a decision for craftsmanship over volume.
On the nose, the sparkling wine opens with apricot and a hint of vanilla, underscored by mineral freshness. On the palate, the extra brut dosage confirms the dry, precise character: little residual sugar, but a clear fruit line and an invigorating finish.
Serve it well chilled at 7–9 °C as an aperitif or with salmon tartare, fried zander, or a mild goat cheese. It also makes a good companion to a light risotto.
