PEPERONI - tomato sugo with peppers

Tomato sauce with Italian bell peppers and herbs — fruity, slightly sweet, with a mild spiciness at the end. The bell peppers give the sauce depth without overpowering the clear tomato flavor. Versatile: perfect as a quick everyday pasta dish or as a base for savory meals.

Short pasta shapes like penne or fusilli work best, as their ridges absorb the sauce evenly. Freshly grated pecorino adds a salty flavor, while torn mozzarella creates a creamier texture. A Primitivo or Montepulciano d'Abruzzo is recommended as a wine pairing: both reflect the fruity notes and complement the paprika's heat well.
