No grassy bomb, no passion fruit exuberance: Paul Cluver's Sauvignon Blanc shows what the cool Elgin Valley can do — firm structure, clear line, a finish with a salty bite.

Paul Cluver is one of the pioneering wineries in the Elgin Valley, about 70 kilometers southeast of Cape Town. The family-run estate lies at an altitude of approximately 200 meters near the Elgin Plateau rift valley—a region characterized by ocean winds and cool nights. These conditions slow down ripening and preserve the natural acidity that clearly distinguishes Elgin from warmer South African vineyards.

In the glass, aromas of citrus blossom, white peach, and a distinct hint of gooseberry are revealed. Herbs—almost reminiscent of verbena and green leaves—underline the freshness. On the palate, it is straightforward and mineral, without the cloying sweetness of many overseas Sauvignons. The finish is dry, crisp, almost salty. Stylistically, it lies between Loire elegance and the citrus-forward side of Marlborough—91 points from Tim Atkin confirm its quality.

Serving temperature: 9–11 °C. Pairs well with goat cheese, grilled sole fillet, asparagus with hollandaise sauce, or an Asian glass noodle salad with coriander and lime. Drink now or store until 2026.
