The Franz Haas winery is located in Montagna/Montan in the South Tyrolean Überetsch, one of the most famous sites for Pinot Nero in Italy. The Haas family has been one of the most renowned addresses in the region for generations — known for precise viticulture at alpine altitudes, where cool nights sharpen the aromatics and keep the acidity lively. The Spumante is created according to the classic bottle fermentation (Metodo Classico) and comes into the bottle without liqueur d'expédition — hence the name Pas Dosé.

In the glass, it shows a fine, persistent perlage. On the nose, red cherry, raspberry, and a hint of white flowers, underpinned by a mineral, slightly spicy note. On the palate, bone-dry, with lively acidity and a clear, salty finish — not a gram of residual sugar softens the line.
