Extra Virgin Olive Oil Dell' Ornellaia

Olive oil from Tenuta dell'Ornellaia – the same estate in Bolgheri that has achieved international fame with Masseto and Ornellaia. The estate is located in the coastal strip of the Maremma, where Mediterranean sea breezes, mineral-rich sandy soils, and mild winters give the olives a special ripeness.

The Olio Extra Dell' Ornellaia is cold-pressed from hand-picked olives of the estate – the same precision that Ornellaia applies to the vineyard is reflected here in the olive mill. In the glass, it is golden yellow with a green shimmer. On the palate, it is harmonious and rounded, with subtle freshness and a delicate almond note in the long finish – less peppery than many Tuscan highland oils, but balanced and elegant.

Use it as a finishing oil over burrata, risotto, or grilled sea bass. A spoonful over white beans with fresh sage also makes a big difference. Do not use for frying – the aromatic compounds are heat-sensitive. Store in a cool, dark place and consume within six months of opening.

Pairs well with a dry Vermentino, a young Ornellaia rosé, or a mineral Soave.

The combination of soil, sun, sea, wind, and the stories of this land shapes every wine. Ornellaia's soils are of marine, alluvial, and volcanic origin. The vineyards of Ornellaia are divided into dozens of parcels—each one a microcosm with its own identity and expression. The rows of vines are predominantly oriented southwest to capture the last rays of the sun before it sets over the sea.
