Nero di sepia - linguine with squid ink

Nero di sepia - linguine with squid ink
Black linguine from Tuscany, colored and flavored with real squid ink — no artificial colors, no preservatives. The dough is made from durum wheat semolina with wheat germ, hand-shaped in a small Tuscan factory.
The ink gives the pasta its deep black color and a subtle marine flavor that perfectly complements fish and shellfish dishes. After 12 minutes in boiling salted water, the consistency is firm to the bite, with a good binding properties for creamy sauces. Classic with Venere mussels, calamari, or a cream and saffron sauce with shrimp. Pairs well with a dry Vermentino di Sardegna or a mineral Soave.
