Domaine du Colombier operates in the heart of the Muscadet growing region at the mouth of the Loire, where Melon de Bourgogne finds its finest expression on granitic and gneiss soils. The term "sur lie" here is more than just a designation: after fermentation, the wine remains on its lees, gaining structure and a delicate creaminess that distinguishes it from simpler Muscadets.
In the glass, aromas of green apple, lemon zest, and white blossoms emerge, accompanied by a slightly iodine-salty undertone reminiscent of its proximity to the Atlantic. Medium-bodied, with lively acidity and a clean, dry finish. This is not a wine that will wait long—it is best enjoyed young and chilled.
Serving suggestion: Best enjoyed with seafood — oysters, mussels, grilled scallops. It also pairs well with goat cheese or as an aperitif. Serving temperature: 8–10 °C.
