Millesimato Prosecco Spumante Brut DOC

A Prosecco that takes its Brut character seriously: no mellowness from residual sugar, but structure from fruit and acidity. The Millesimato from San Simone di Brisotto shows what the Glera grape can achieve in Friuli when given space.

The winery is located near Porcia, in the heart of Friulian viticulture, and is now managed in the fourth generation by Anna, Chiara, and Antonio Brisotto. Their grandfather Gino founded the cantina with the goal of producing varietal sparkling wines — light and sparkling, but not flat. This standard continues through the range to this day.

In the glass, the Millesimato shows aromas of apple, pear, and ripe apricot, brightened by a citrus impulse that gives the wine contour. Added to this is a fine almond blossom note that draws the bouquet into depth. The perlage is delicate and persistent, the mouthfeel silky, the acidity lively without sharpness. The finish has more length than the first sip would suggest.

Served cold at 6–8 °C — as an aperitif, with bruschetta with ricotta, shrimp with lemon butter, or a plate of prosciutto. It also holds its own alongside salty snacks without falling away.
