Maccheroni are among the oldest pasta shapes in Italy—short, smooth tubes with a hollow center that holds and retains sauces. Originating in southern Italian cuisine, this shape remains a staple in any well-stocked pantry.

The tubular shape makes maccheroni the perfect choice for creamy cheese sauces: a Quattro Formaggi sauce soaks into the center, releasing sauce with every bite. The same applies to chunky tomato sauces with olives or capers, diced vegetables, and sautéed mushrooms—the shape holds everything together. Cooking time al dente: approximately 8–10 minutes. A simple southern Italian white wine like a Fiano di Avellino pairs well with this, or, for tomato sauce, a light Primitivo.
