Lingue di suocera with rosemary

Lingue di suocera—mother-in-law's tongues—are a traditional Piedmontese pastry: long, paper-thin puff pastry strips, crunchy and feather-light. Mario Fongo, a manufacturer from Piedmont, seasons this version with dried rosemary.

In the mouth, they dissolve into delicate, buttery layers; the rosemary provides a subtly resinous-aromatic finish. The consistency lies between fine puff pastry and a cracker—more elegant than a breadstick, lighter than crispbread.

On a cheese board, they pair well with Piedmontese soft cheeses like Robiola. As a wine companion, they harmonize with a light Barbera d'Asti or dry Prosecco. Unpack shortly before serving—this preserves the crunchiness.
