La Narval Sardines in Olive Oil
La Narval sardines come from the Atlantic Ocean off the Portuguese coast, caught between June and October – the season when the fish have accumulated the most fat and their flavor is most intense. They are preserved by hand in olive oil, without any industrial processing.
In the jar, firm yet tender fillets reveal themselves with a savory sea salt aroma and a mild, nutty finish from the oil. The texture remains succulent – a sign of careful processing. Serving temperature: room temperature. On toasted sourdough bread with a squeeze of lemon, in a bean salad with parsley, or straight from the tin – the pickling oil should be served alongside.
A dry Vinho Verde, a light Manzanilla sherry or a crisp Albariño from Galicia would go well with this.
