Hillside Select

The Hillside Select from Shafer Vineyards is one of the most famous Cabernet Sauvignons in the Napa Valley — concentrated, multi-layered, and with the unmistakable character of the steep hillsides from which it originates.

John Shafer founded the family winery in 1972 after working as a publisher for over two decades. He replanted the vines dating back to the 1920s and terraced the rocky slopes. The first vintage in 1978 won the San Francisco Vintners Club Tasting and later an international blind tasting against Château Margaux, Château Latour, and Château Palmer. Today, the winery manages over 80 hectares in top locations of the Napa Valley. Winemaker Elias Fernandez has been managing the cellar since 1994.

In the glass, the Hillside Select shows dark cherry, blueberry, and blackberry, underscored by espresso, sweet vanilla, and a hint of rose blossom. Oregano and sage bring Mediterranean depth, while wet earth provides complexity. The tannins are ripe and dense, the finish long and warm.

Serve it at 17–18 °C — with braised lamb shank, beef fillet with a herb crust, or aged Pecorino. A wine for special evenings that deserves time in the glass.
