Long stretched Piedmontese breadsticks

These Grissini stirati lunghi come from Piedmont—the region where these thin breadsticks originated. Mario Fongo stretches each stick by hand, which explains the irregular shape and loose texture that machine-made breadsticks cannot achieve.

The dough is based on sourdough, extra virgin olive oil, and lard. Baked crisp, but not dark, they break cleanly and leave a savory sourdough aroma without a bitter aftertaste.

They look great on the table alongside salami, raw ham, cheese, or antipasti. Serving temperature: Room temperature. They pair just as well with a Barbera d'Asti or dry Prosecco as an aperitif.
